Viva la pasta!
So much has been written about it, and done it (from adding a simple tomato sauce to serving it with chocolate sauce). Making dough for pasta is really funny at every age. You can do tagliolini, lasagne, tagliatelle, cannelloni, ravioli or gnocchi. Of the many varieties of pasta, eight out of ten times the one showing up on a menu is spaghetti. If you are of Italian ancestry, you will always be judged on your ability to cook pasta.
When Marco Polo brought the concept of pasta to Venice from China, it spread to every Italian city and region but changed its shape and texture to suit local tastes. Each pasta has assumed its own individuality and acquired its own culture and education.
