We have always eaten with the seasons so we get the freshest and most intensely flavoured food. Over the centuries we’ve learned how to prepare foods to get the most flavour out of them. In Tuscany, the wind carries the perfume of herbs, which grow like weeds in the fields and the kitchen is filled with the aromas of those herbs as they flavor whatever is cooking in the wood-burning oven.
In our garden you can find aromatic herbs, tomatoes, onions, different kind of salad, green beans, artichokes, garlic, potatoes, leeks, cucumbers, different kind of cabbage, spinach, Swiss chard, parsley, peppers, eggplants, turnips, water melons, white melon...
